Smile Photo Mural Backdrop for Model Railroad

I'm fairly new to Photoshop and am running the trial version at the moment. I have been trying to design a 12' long x 2' high photo mural backdrop for a new 'n' gauge model railroad that I am constructing.
It's not that critical what the backdrop actually depicts except to say that it would be preferable for it to show pine trees and distant mountains. I have got lots of model pine trees to add to the layout and would like to blend them into the backdrop. The distant mountains are to add depth to the scene.
I have made enquiries with my local photographic shop and they say that they can print it for me (at a price), on a matte sticky-backed vinyl material so that I can fix it to a sheet of mdf which will be used as the backdrop.
I have a few of photos which I like, but I'm not sure whether they would look good when stretched to the required size. Also I'm not sure how to go about re-sizing them to scale (ie. anywhere between 1:148 and 1:160 scale with 9 mm track gauge modeling), and whilst I don't want the backdrop to grab the limelight, it does need to look reasonably good when printed.
Please can anyone offer any advice or help in preparing either of these two photos for printing ?

No offense iDad, but the purpose of this forum is to teach people how to use Photoshop and not to send you some new customers or visitors.
