Try selection tools, like magic wand, and lasso/magnetic tools. You also need to learn about layers, and how to properly use them. What colors are you wanting the picture, and what are you wanting transparent. On layers, there is also an option to edit blending options. Blending options gives you a pretty wide variety of styles you can use. To access that you should make a selected layer, then right click the layer in the layer box, and click blending options. Hope I was helpful.

If you want to recreate this "without pixelation" you need to use a vector based program like Adobe Illustrator, or a freeware program like Inkscape.
Otherwise you can follow some some of the tips Carson suggested to alter the existing image.
Post any additional questions you have we'll be glad to help you out.

Just a question, why is it that some photoshop design have "jaggedy" edges and some don't? Vector images in particular looks so smooth

    Resolution.
The higher the resolution the more you need to zoom in or magnify the image to see the jagged edges, but they're always there.

Raster graphics are based on pixels, dots.

Vector graphics is the use of geometrical primitives such as points, lines, curves, and shapes or polygon(s), which are all based on mathematical equations, to represent images in computer graphics.
