I know it's a simple technique, but how can this be replicated?

This is a simple layer mask

Two text layers and two background color layers.

Black text on a white BG

White text on a black BG.

Make a selection with the Rectangular Marquis Tool around the White text on the black bg.

Then select the black background layer, and add a layer mask.

If the layer order is confusing, it works like this as well.

Or ... after the text is rasterized, put a rectangular selection over half of the text, hit control-I (ie, "invert") and it's done.

That being said, Sam's approach is much more generally applicable and more flexible, and definitely should be in your bag of tricks, LOL.

Are the two text layers in the same position or did you move them so they are side by side?

You have two text layers with the same text you need to separate the word as below or as Sam showed you, have a separate word on each layer with different colors

This is easy, I'm not sure why your having problems with this.

Two words on two layers.

STATE created in black on the LEFT side.
CHAMPS created in white on the RIGHT side.

Two layers like this.....

All that's left to do is add the black and white solid color layers BELOW the text.

Now add the layer mask to the black layer like I explained above.

Ah, the character at the black/white split is actually an ampersand, how would I pull that off?

So, TEST & TEST, with the color split right down the middle.

Not at all sure what your talking about. There is no character in your original example.
So NO.........it would be TEST TEST.

I don't think Sam could have explained it any simpler!

All you need to do is but the word Test on one layer colored in black and Test on another layer colored in white and follow his instructions

gedstar I just realized what he may be talking about. Let me see if I can explain.

Black text layer on top.

It will look like this.
(NOTE: I'm using a visible bg so you can see the text, the bg should be white.)

You will also add the two solid color layers.......black above the white layer.
Your layers panel should look like this.......

If you have done this correctly your canvas will look like this.....

Make you selection (like the original tutorial) around the white text.

Select the Black solid color layer and hit the add layer mask icon.
It will now look like this......

Now make a selection around the white text area.

Select the Black TEXT layer.
Add a layer mask.

It should now look like this.......
