Jessicayla's GIfties

No problem! Hope you find them useful :)

To add to my gifts, it was recommended that I include the recipes for the food that I posted in this thread!
Here are the pictures again, along with the recipes.

Coconut Flour Pancakes

  • 1 tablespoon honey
  • 4 eggs, room temperature
  • 1 cup coconut milk
  • 2 teaspoons vanilla extract
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cinnamon
  • coconut oil for frying
Heat the pan on medium-low heat and when pouring the batter, make the pancake diameter 3 inches wide.
Cook on one side for about 4 minutes, then flip and cook another 2-3 minutes.
If the batter seems too thin, you can add a little more coconut flour!

This will make enough for 2-3 people depending on how hungry you are.
Top with honey, maple syrup, or whatever you see fit!
This pancake recipe is Paleo / Primal Diet friendly. If you're not sure what this is, look it up!

Guacamole Burger

  • 2 angus patties
  • 1 avocado
  • Mixed greens
  • Sea salt
  • Blue cheese
  • Duke's mayonnaise (you can use whatever kind)
  • 2 sets of buns
  • coconut oil for frying
This one is a pretty laid back recipe, because I created it in full.
The amount of mayo or amount of guacamole is up to you.
One avocado made enough guacamole for 2 burgers.
The main thing that makes this burger great is the small touch of spreading
coconut oil on to the inside parts of the buns and putting them on the heated pan just enough to toast them.
This makes the bread sweet and adds to the awesome flavor.
For the guacamole, I like to keep it simple, so all I did was add mixed greens and a little sea salt and that was it.
The rest is up to you - how you cook your burger, how much mayo or blue cheese to put on.
It's a delicious burger and I'm still perfecting it. I feel like it could use a jam.. we'll see.

Fajita Frittata with Guacamole

  • 1 pound skirt or flank steak, thinly sliced
  • 1/2 teaspoon chili powder
  • 6-10 eggs, whisked
  • 1 small bunch cilantro, roughly chopped
  • 2-3 avocados, cut into small chunks
  • sea salt to taste
  • chives
  • chopped tomatoes
These are my altered ingredients to this recipe, so for instructions and some more alternate ingredients, go check out that site!
This is also a Paleo / Primal Diet friendly!

Hope someone likes these and tries them out! I will post a super easy dessert later today :D

Super Easy Strawberry Banana Ice Cream

  • 1 Banana
  • 1 handful of strawberries
  • 2 tablespoons of coconut milk
  • 1 teaspoon vanilla extract
Chop the banana and strawberries up, and store them in the freezer for a few hours.
After they are sufficiently frozen, take them out, and with a food processor or blender, add all ingredients and blend!
That's it - no added sugar, no dairy, and delicious! Primal / Paleo Diet friendly :D

I also made some super easy pancakes earlier!
(sorry, no picture!)

WOW!

What fantastic gifts Jess. Thank you so much.

COOL!

Dv8, they're in my swatch library already. I especially like the architectural, metal, and rose; they're all going to be useful.
