Modifying a document (saved as jpg)

Looking for someone who can add entries (more classes) to a "confirmation of registration" from school, and modify certain entries.

The problematic here is the watermark or background involved. If cutting/copying and pasting text, the background becomes disturbed and is no longer in line with the rest of the information.

Need a Photoshop guru on this on.
