Lightbulb photoshopping scanned photos for print *newbie question*

sorry if this is a dumb question:

i'm working on publishing a book of my photography. i've had enough design disasters in the past to know about undesired color-shifts and incorrect blacks when converting rgb to cmyk. so my dumb question is this: if i convert an rgb photo to cmyk for commercial printing, will the darks/blacks look the same? it isn't possible to choose between rgb or cmyk color profile when scanning is it?

and if i have to readjust (contrast, levels, etc) after conversion to cmyk, how do i ensure that the darkest black in my photos prints as true cmyk black (0,0,0,100)??

thank you in advance for your replies.

You can try change it to CMYK then Levels and just do the Black channel And use that to make it pure K but it will darken the photo
