    There is no quick magic solution for this. Put every letter on its own layer and you'll have all the freedom (with the help of other tools) to make it look like on the Apple site.

Don't use the toolbar to switch to the convert point tool, it really slows down everything down if you don't use the shortcuts. I seldom use the toolbar while working with the pen tool...
