    Those are some beautiful shots. The "little" castle next door looks every bit as impressive to me. It just blows my mind that buildings of that magnificence could have been constructed so many years ago.

    Not an exact match, but Bebas Neue seems to be a close match and is available free.

    There's no need to do replace color. Just go to "Channels" and select the Blue Channel only. Then go to "Image > Mode > Grayscale". Finally, do a levels adjust to make the background lighter and the text darker.
