Instead of trying to start from scratch and either draw or use "find edges" to get prominent leaf veins, I would probably find some simplified B&W images of leaf veins and put that image on a layer on top of the image of interest and use an appropriate blending mode, opacity, etc..

Here are a few examples of the sort of simplified leaf vein images that I might start with:
