    It seems to me that it's a disservice to not advise the OP that this image could be more easily selected using tools other than the pen tool. If the OP wants to use the pen tool for some reason, they should add a vector mask to allow for precise adjustment.

    This can also be done by stroking a path with a brush. Make a vertical brush as shown, set the angle jitter to direction and adjust the spacing as needed.

    Stroke and fill options are available on the top tool bar when you create a shape-path which yields a shape layer.     Change the resolution by going to Effect-Document Raster Effects Settings. It's best to set it first rather than after the fact as the appearance of some effects can change depending on resolution.

    That should work, I don't know why it is not. You could also add a stroke of the same color to the type for a bold effect.

    There are many ways to do it. I selected the white with Select Color Range. Added a color adjustment layer & reversed the selection for the mask. I also added a white color adjustment layer to clean it up using the same selection. Double click the color layer and change it to whatever you please.

    When drawing symmetrical shapes such as this, you only need to use one guide to mark the middle. Draw only half of the shape as an open path. Duplicate and flip the duplicated path horizontally and join it with the original.
