I want to create a text into an image. I'm not completely sure on the (Correct) way to achieve this effect. Notice The "S" in adobe PS cuts into the black. I'm wishing to do the same but with a whole word into the top of an image.

This can be done so many ways.................can you upload your images and show us what your trying to do?
 
In the example above, this is nothing more than a text layer above the graphic layer.................I'm not sure what your asking for! Sorry, can you please explain further.

Yeah I want to create a cutout so the text fits into the bottom image. Like in the first image the s is cutout of the clack
 
Are you going to have a transparent background or one with color?

OK, give me a few minutes..............multi-tasking here. LOL!!
 
OK...........let's give this a shot!

You have a graphic layer......

Then you have a text layer......

Here they are combined....

Select the text layer and double click in the body of the layer in the layers panel.
This will bring up a layer style.
Choose STROKE
Set your stroke the way you like it.
Hit OK
You should have something looking like this.....

Now comes the fun part.

Place your cursor over the "fx" icon on the text layer.

Right click and you will see a menu, choose "create layer".

This will separate the stroke out of the layer style and will open it on it's own layer.
It will look like this....

Turn the "outer stroke layer " off.
Select/highlight the "graphic" layer.
Now hold down the Cmd/Cntrl key and mouseclick the "text's outer stroke" layers thumbnail image.
This will make a selection of the "text's outer stroke".

Now go to LAYER > LAYER MASK > HIDE SELECTION

This will add a layer mask to the graphic layer.

You should now have this....
