    One advantage with LAB is the that there is a separate channel just for lightness. Therefore you can alter colors far more easily. Sometimes it's useful to invert the object layer before applying the adjustments. In the shot below I inverted the original to reverse the highlights and shadows.

    Sure. Just fooling around I split the bottom copy and used a gradient instead.

    With the pen tool make a path and use the width tool to get the basic shape. Make several duplicate copies, change colors, rotate and use the width tool as needed.

    Illustration #3 shows a new point and handles like my last example, so it should affect the fill. But you know what you are experiencing. Let me know if you work it out.

    I can't see too clearly but it appears you are starting a new path, rather than continuing the existing path, hence the original path is not visible. Check your layers panel to verify. If you want the last point to go another direction use the Convert Anchor Point tool to drag the upper handle...

    A surface is defined by the way it reacts to light. Glossy surfaces reflect light.
