    Yes, F6, but it's called Color Palette, not "Color window", even when you find it in the menu under "Windows" (just to avoid that you confuse people if you call it that way in future posts. ;) ) Double clicking on the foreground color opens indeed the Color Picker window.

    Adjustment layers and sharpen

    You don't have to flatten the image if you use CS4 (I believe it works in CS3 too). Just select all your layers in your layers palette, right click that selection in your layers palette and select "Convert To Smart Object". You can now sharpen this object without destroying any image data...
