I believe that is the term I am looking for. I'm trying to figure out how to layer different images on top of others, if that makes sense.

Like if you had a plain black background with several different images related or not.

I want to make a signature for my mustang forum using my car. What I want in the signature is some sort of background with maybe two different pictures of my car. How do I go about doing this?

Put the individual elements in separate layers, them mask out the parts of the layers you don't want to show.
Work from the bottom up, the last layer being the background.
Make the layer above the background visible and them remove what you don't want, then move on to the next layer above that.

You can just erase the majority of the layer area and just mask around the specific layer elements you want to include in your image.
