    Photoshop always uses .PSD as it's default file format. You can just select JPEG from the list or use SAVE FOR WEB AND DEVICES. Or you can write an action to save files as JPEGs if you prefer.

    No. Transparency doesn't work without clipping paths with an EPS file. If transparency is required consider a PNG if you're creating an image for the web. If you're going to use the image for print through a layout program like InDesign, simply remove the background layer and save as a PSD file.
